Trying To Stay Motivated With My Slow Carb Vegetarian Diet

So I bought The 4hr body by Tim Ferris around Christmas and have been following his diet since The New Year. I only eat protein as veggie chycken, Tofu dogs, veggie burgers as well as veggies and beans. Basically that sums up the diet. Of course since I Love to cook, I think up new ways to eat this way interestingly. This Picture shows a typical meal within this diet. I've got vegetarian Chili, spinach with almond slivers and lettuce and deli slice wraps. Do you see Why I'm not hungry on this diet? The challenge is not to get bored. So far, pretty good. I lost 8 pounds last Week so that's encouraging!
