Vegetarian Recipe: Crispy Tangy Tofu | Good Food

Crispy Tangy Tofu

Makes 4 servings

Zest of one large lemon (Meyer lemon is even better, if you can find one)

Juice of one large lemon (about 4 tablespoons)

Zest of one orange

Juice of 1 orange

2 Tablespoons fresh carrot juice

1 Tablespoon honey

1 Tablespoon soy sauce

Pinch of cayenne pepper

3 scant Tablespoons rice flakes (you can substitute fine breadcrumbs if you can’t easily find rice flakes, but they are well worth seeking out)

Pinch of kosher or other salt

Pinch of freshly crushed black peppercorns

1 egg yolk

1 block organic silken tofu, drained then wrapped in paper towels

1 tsp chopped chives, chopped (optional)

Zest the lemon and orange and set aside. Squeeze the lemon and orange juices into a small saucepan, add the carrot juice, honey, soy sauce, and cayenne, and bring to a boil. Let it simmer on low heat while you prepare the tofu.

Add the rice flakes (or breadcrumbs), salt, and pepper to a spice grinder and pulse a few times. Be sure that the paper towels have absorbed as much water as possible from the tofu, then slice the tofu along its “equator,” creating 2 large flat-ish halves. Cut each of those in half, giving you 4 flat pieces. Spoon the egg yolk on one side of each piece, and evenly spread the rice-flake crust over them.

Heat the butter in a small, nonstick fry pan over medium heat and sauté the tofu, crust-side down, for about 5 minutes, until it browns nicely. Carefully flip the pieces over with a spatula, and briefly cook the other side, about 2 minutes. Pour some of the reduced sauce into a warm plate or shallow bowl, and slide the tofu into the center of the sauce, crispy side up, and top with the orange zest and lemon zest, and the optional chives.

To all of you who say you don`t like tofu, you haven`t tried this recipe! For tofu to taste good, it has to be well prepared and full of flavor. The only change I made to this recipe is that I used extra firm tofu instead of the silken tofu and I did not use the egg yolk. I found that the tofu was moist enough to pick up the breadcrumbs without it.

Plato, Plotinus, Pythagoras, Seneca, Marcus Aurelius, Plutarch, Marsilio Ficino, Giordano Bruno, Leonardo da Vinci and many other thinkers were vegetarians!

Some of the greatest thinkers in the world adopted a vegetarian diet for many different reasons. Here is a list of philosophers who did not eat meat and why they chose to be vegetarians.

Was Plato a Vegetarian?

Much has been debated about Plato's vegetarianism, but little is known about it. Although some say that there are no evidences that indicate that Plato might have been a vegetarian, in The Republic, Plato describes an ideal state in which the guardian class should not eat meat under the argument that it was much more rational to choose a diet that would be less harmful to the environment and to the spirit.

Platonic philosophy defended that the act of eating like any other behavior should be done consciously, that is, people should have the power to choose between good and bad, morally right and morally wrong, harmful and harmless, instead of allowing the senses to determine what they are going to eat.

Plato's philosophical vegetarianism influenced those who came after him to abstain from eating meat, including (but not limited to) these great thinkers:

  • Plotinus philosopher and founder of Neoplatonism,
  • Theophrastus the successor of Aristotle,
  • Plutarch Greek thinker who wrote On the Eating of the Flesh,
  • Porphyry philosopher and author of On Abstinence From Animal Food, and;
  • Xenokrates school head of the Platonic Academy.

Oprah's Vegan Challenge Starts Feb.1

On February 1, the Oprah Winfrey Show will air "The Vegan Challenge" in which Oprah and 378 Harpo staffers take on veganism in a one-week challenge to cut out all animal products—“no meat, no dairy, no animal anything.” During the show, Oprah will speak with special guests Michael Pollan and Kathy Freston, and Lisa Ling will take the audience inside a beef processing plant. Back in 2008, Oprah decided to dabble in “conscious eating” and spent 21 days on a vegan cleanse. The daytime talk show host claimed to have had a difficult time with the experience, she craved eggs—which she seldom ate prior to the cleanse—and longed for cheese daily. While she was not ready to call herself a vegan, or even a vegetarian, at the end of the experience, Oprah said she would be more mindful of her choices. “I'm eating a far more plant-based diet,” explained Oprah. “Less processed food. Thinking about sugar and fat consumption not in terms of calories but in terms of what happens to my well-being.” We know that after this one-week challenge, no matter how wonderful the vegan diet is portrayed, it is quite likely that Oprah and her staffers will high tail it to the closest pizza joint to order a cheesy meaty pie before hitting up the local Baskin Robbins. That being said, it is still commendable that Oprah will highlight this topic on her show. Twenty years ago, we would have never seen a program with the reach of The Oprah Winfrey Show give an ounce of positive attention to veganism, heck most people probably didn’t even know what the word “vegan” meant… we’ve come a long way baby. I just had to share with you this fun little game I found at Zimbio in their Style Bistro. You decide who is most stylish on 20 sets of beautiful vegetarians and see how you rank.

Weekday Vegetarian: Roasted Cumin and Chickpea Salad : TreeHugger

My mother is always telling me that she could be a vegetarian, because she doesn't much like meat and she hates handling in before she cooks it. But I know she could never do it, because it isn't the meat that really bothers her, it's food itself. She's a picky eater and won't touch stuff like lentils and chickpeas. Tofu? Not on your life. If you are going to embrace a vegetarian lifestyle, or a weekday vegetarian lifestyle, or even just going for Meatless Mondays, you have to eat more than a plate full of vegetables. It made me laugh when she cut out this recipe out of a magazine for me. She handed it over with a little moue of distaste and said "better you than me".

In this case, it's too bad that she doesn't realize what she is missing. I loved this mouth puckering tart salad. It took me about five minutes to make it and I let it sit for the fifteen minutes that the recipe suggested. If you don't want such a tart salad, then cut the amount of lime juice you use, or else let it sit for a day. The next time I make this, I think I would add some chopped cilantro or parsley as well. This would be great as a side with grilled vegetables or something like a frittata. It would also be a good pot-luck party dish or buffet dish. Just double the recipe.

Roasted Cumin and Chickpea Salad

3/4 tsp cumin
2 Tbsp lime juice
1/2 tsp salt
1/4 tsp pepper
2 Tbsp extra-virgin olive oil
1/2 small red onion, chopped
1 celery rib, sliced
1 medium tomato, seeded and chopped
1 can (16 oz) chickpeas, rinsed and drained
1/4 cup crumbled feta

1. Heat a dry 8-in. skillet over medium heat. Add cumin and toast 1 minute or until spice is fragrant. Remove from heat.

2. In a small bowl, whisk lime juice, salt, pepper and toasted cumin until combined. Slowly add oil, whisking until blended.

3. Place onion in a large bowl and pour in dressing. Place celery, tomato and chickpeas on top of onion without mixing. Cover and refrigerate 15 minutes.

4. Add feta to bowl with chickpea mixture. Toss to combine.

Johnny Depp’s Green Tea Diet Makes Him Kinda Vegan

You can always tell the best (or at least the craziest) actors by their commitment to their roles, and Johnny Depp commits as much as anyone in Hollywood. For his role as a vampire in the upcoming movie Dark Shadows (the newest collaboration between Depp and Tim Burton), Depp is aiming to drop his weight down to a gaunt 140 lbs, and is doing so through a green tea diet.

Depp’s version of the diet includes drinking “gallons of green tea” and supplementing with low-fructose fruit… and that’s about it. Shooting for the film begins in April, so it looks like the 47-year-old is aiming to stay on this diet for quite a while.

The idea behind the green tea diet is to use the natural components of green tea to speed up weight loss: the polyphenols in the leaves are said to boost metabolism, suppress appetite, and possibly even burn fat. Green tea also contains a high level of caffeine, which might lend to suppressing appetite and burning fat as well. So, Johnny might be a bit jittery for the next few months.

The unintended benefit of all this is that, in consuming only green tea and fruit, Depp will be an honorary dietary vegan for the duration of the weight loss experiment! Depp is a known fan of fried chicken, so maybe he can kick that habit with a bit of fruit and tea.

Wow! And I thought my diet was severe! I don`t envy Johnny right now. Although he is on to something with the green tea. My diet from the 4hr Body by Timothy Ferriss.
